El Fuego Smash Burgers

Ingredients

  • Ground Beef (80/20) – 1 lb
  • Burger Buns – 4
  • American Cheese – 4 slices
  • Onion, Thinly Sliced – 1 small
  • Mayonnaise – 3 tbsp
  • My Sauce Lab El Fuego – 2 tbsp (plus extra for serving)
  • Dill Pickles – for topping
  • Salt and Pepper – to taste
  • Butter – 1 tbsp

Directions

  1. Mix the mayonnaise with 2 tbsp El Fuego to make the smoky burger sauce. Set aside.
  2. Divide the beef into 4 loose balls. Do not overwork the meat.
  3. Heat a cast iron skillet over high heat. Place a beef ball in the pan, top with a few onion slices, and smash flat with a spatula. Season with salt and pepper.
  4. Cook 2-3 minutes until the edges are crispy and browned, then flip and top with cheese. Cook 1 more minute.
  5. Butter and toast the buns in the same pan.
  6. Build each burger with sauce, patty, and pickles. Serve with extra El Fuego on the side.
