Lucifer Sweet Heat Grilled Cheese

Ingredients

  • Sourdough or Thick White Bread – 4 slices
  • Sharp Cheddar, Shredded – 1 cup
  • Monterey Jack, Shredded – 1 cup
  • My Sauce Lab Lucifer – 2 tbsp
  • Butter, Softened – 2 tbsp
  • Mayonnaise – 1 tbsp

Directions

  1. Mix the two cheeses together in a bowl and toss with the Lucifer sauce so the heat is distributed evenly rather than pooling in one spot.
  2. Spread butter on the outside of each slice of bread, and a thin layer of mayonnaise on the inside — the mayo is the trick to an even golden crust.
  3. Heat a skillet over medium-low heat. Low and slow is what melts the cheese fully without burning the bread.
  4. Build each sandwich with the Lucifer cheese mixture and place butter-side down in the pan.
  5. Cook 3-4 minutes per side, pressing gently, until deeply golden and the cheese has completely melted.
  6. Rest for 1 minute before slicing so the cheese sets slightly. Serve with extra Lucifer for dipping.
