Cook time: 25 Minutes
Serves: 8
Ingredients
- Cornmeal – 1 cup
- All-Purpose Flour – 1 cup
- Sugar – 1/3 cup
- Baking Powder – 1 tbsp
- Salt – 1 tsp
- Buttermilk – 1 cup
- Eggs – 2
- Butter, Melted – 1/2 cup
- My Sauce Lab Lucifer – 2 tbsp (for the batter)
- Butter, Softened – 4 tbsp (for the honey butter)
- Honey – 3 tbsp
- My Sauce Lab Lucifer – 2 tbsp (for the honey butter)
Directions
- Preheat oven to 400°F. Grease a 9-inch cast iron skillet or baking dish and place it in the oven to heat.
- Whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk the buttermilk, eggs, melted butter, and 2 tbsp Lucifer.
- Pour the wet into the dry and stir until just combined — lumps are fine, overmixing makes it tough.
- Carefully pour the batter into the hot skillet. It should sizzle.
- Bake 22-25 minutes until golden and a toothpick comes out clean.
- While it bakes, whip the softened butter with the honey and remaining 2 tbsp Lucifer until fluffy.
- Serve the cornbread warm with a generous spread of sweet heat honey butter.
