El Fuego Loaded Beef Nachos

Ingredients

  • Tortilla Chips – 1 large bag
  • Ground Beef – 1 lb
  • Black Beans, Drained – 1 can
  • Cheddar and Monterey Jack, Shredded – 3 cups total
  • My Sauce Lab El Fuego – 4 tbsp (divided)
  • Ground Cumin – 1 tsp
  • Pickled Jalapeños – 1/2 cup
  • Tomato, Diced – 1
  • Red Onion, Diced – 1/4 cup
  • Sour Cream, Guacamole, and Cilantro – for serving
  • Salt – to taste

Directions

  1. Preheat oven to 400°F.
  2. Brown the ground beef in a skillet over medium-high heat, about 7 minutes. Drain excess fat.
  3. Stir in the cumin, black beans, 2 tbsp El Fuego, and a pinch of salt. Cook 2 more minutes.
  4. Spread half the chips on a large sheet pan. Top with half the beef mixture and half the cheese. Repeat with a second layer — layering is what keeps the bottom chips from going bare.
  5. Bake 10-12 minutes until the cheese is fully melted and bubbling.
  6. Top with jalapeños, tomato, and red onion, then drizzle with the remaining 2 tbsp El Fuego.
  7. Serve immediately with sour cream, guacamole, and cilantro.
