El Fuego Smoky Chipotle Meatloaf

Ingredients
- Ground Beef (80/20) – 2 lbs
- Breadcrumbs – 3/4 cup
- Eggs – 2
- Onion, Finely Diced – 1 medium
- Garlic, Minced – 3 cloves
- Milk – 1/3 cup
- My Sauce Lab El Fuego – 5 tbsp (divided)
- Ketchup – 1/3 cup
- Brown Sugar – 1 tbsp
- Smoked Paprika – 1 tsp
- Salt and Black Pepper – to taste
Directions
- Preheat oven to 375°F and line a baking sheet with foil.
- Combine the beef, breadcrumbs, eggs, onion, garlic, milk, 3 tbsp El Fuego, smoked paprika, salt, and pepper. Mix with your hands until just combined — overworking makes it dense.
- Shape into a loaf on the baking sheet, about 9 inches long.
- Whisk the ketchup, brown sugar, and remaining 2 tbsp El Fuego to make the glaze. Brush half over the loaf.
- Bake for 45 minutes, then brush with the remaining glaze and bake 15 more minutes until the internal temperature reaches 160°F.
- Rest for 10 minutes before slicing so it holds together.
