El Fuego Smoky Chipotle Meatloaf

Ingredients

  • Ground Beef (80/20) – 2 lbs
  • Breadcrumbs – 3/4 cup
  • Eggs – 2
  • Onion, Finely Diced – 1 medium
  • Garlic, Minced – 3 cloves
  • Milk – 1/3 cup
  • My Sauce Lab El Fuego – 5 tbsp (divided)
  • Ketchup – 1/3 cup
  • Brown Sugar – 1 tbsp
  • Smoked Paprika – 1 tsp
  • Salt and Black Pepper – to taste

Directions

  1. Preheat oven to 375°F and line a baking sheet with foil.
  2. Combine the beef, breadcrumbs, eggs, onion, garlic, milk, 3 tbsp El Fuego, smoked paprika, salt, and pepper. Mix with your hands until just combined — overworking makes it dense.
  3. Shape into a loaf on the baking sheet, about 9 inches long.
  4. Whisk the ketchup, brown sugar, and remaining 2 tbsp El Fuego to make the glaze. Brush half over the loaf.
  5. Bake for 45 minutes, then brush with the remaining glaze and bake 15 more minutes until the internal temperature reaches 160°F.
  6. Rest for 10 minutes before slicing so it holds together.
