El Fuego Smoky Baked Chicken Thighs

Ingredients

  • Bone-In Chicken Thighs, Skin On – 8
  • My Sauce Lab El Fuego – 4 tbsp
  • Olive Oil – 2 tbsp
  • Smoked Paprika – 2 tsp
  • Garlic Powder – 1 tsp
  • Brown Sugar – 1 tsp
  • Lime, Juiced – 1
  • Salt and Black Pepper – to taste

Directions

  1. Preheat oven to 425°F.
  2. Pat the chicken thighs completely dry — this is what gives you crisp skin.
  3. Whisk together the El Fuego, olive oil, smoked paprika, garlic powder, brown sugar, lime juice, salt, and pepper.
  4. Rub the mixture all over the thighs, getting some under the skin.
  5. Arrange skin-side up on a baking sheet with space between each piece. Do not crowd the pan.
  6. Roast for 35-40 minutes until the skin is deeply browned and the internal temperature reaches 175°F.
  7. Rest 5 minutes and spoon the pan juices over before serving.
