Schezwan Beef and Broccoli

Ingredients

  • Flank or Sirloin Steak, Thinly Sliced – 1.5 lbs
  • Broccoli Florets – 4 cups
  • Cornstarch – 2 tbsp (divided)
  • Soy Sauce – 3 tbsp
  • My Sauce Lab Schezwan – 4 tbsp
  • Beef Broth – 1/2 cup
  • Garlic, Minced – 4 cloves
  • Fresh Ginger, Minced – 1 tbsp
  • Brown Sugar – 1 tsp
  • Vegetable Oil – 2 tbsp
  • Sesame Seeds – for garnish

Directions

  1. Toss the sliced beef with 1 tbsp cornstarch and 1 tbsp soy sauce. Let it sit 10 minutes — this is what keeps the beef tender.
  2. Whisk the remaining cornstarch and soy sauce with the beef broth, Schezwan sauce, and brown sugar to make the stir-fry sauce.
  3. Steam or blanch the broccoli for 2 minutes until bright green, then drain.
  4. Heat 1 tbsp oil in a wok over high heat. Sear the beef in a single layer for 2 minutes without stirring, then toss for 1 more minute. Remove.
  5. Add the remaining oil, then the garlic and ginger. Stir-fry 30 seconds.
  6. Return the beef and broccoli, pour in the sauce, and toss for 2 minutes until glossy and thickened.
  7. Garnish with sesame seeds and serve over rice.
