Schezwan Beef and Broccoli

Ingredients
- Flank or Sirloin Steak, Thinly Sliced – 1.5 lbs
- Broccoli Florets – 4 cups
- Cornstarch – 2 tbsp (divided)
- Soy Sauce – 3 tbsp
- My Sauce Lab Schezwan – 4 tbsp
- Beef Broth – 1/2 cup
- Garlic, Minced – 4 cloves
- Fresh Ginger, Minced – 1 tbsp
- Brown Sugar – 1 tsp
- Vegetable Oil – 2 tbsp
- Sesame Seeds – for garnish
Directions
- Toss the sliced beef with 1 tbsp cornstarch and 1 tbsp soy sauce. Let it sit 10 minutes — this is what keeps the beef tender.
- Whisk the remaining cornstarch and soy sauce with the beef broth, Schezwan sauce, and brown sugar to make the stir-fry sauce.
- Steam or blanch the broccoli for 2 minutes until bright green, then drain.
- Heat 1 tbsp oil in a wok over high heat. Sear the beef in a single layer for 2 minutes without stirring, then toss for 1 more minute. Remove.
- Add the remaining oil, then the garlic and ginger. Stir-fry 30 seconds.
- Return the beef and broccoli, pour in the sauce, and toss for 2 minutes until glossy and thickened.
- Garnish with sesame seeds and serve over rice.
